The Marscaida on 2026
COVID19 (ECQ) Gardening
Here's what #themarcaidas got from the quarantine gardening.
We have 3 batches of harvest from our pechay, thanks God for the blessing 😍😍😍
First harvest from our okra and second for the bell pepper, after being recovered from being no leaves since it was attacked by caterpillars.
We have just planted sitaw (stringbeans), while the ampalaya (bittergourd) and squash were now crawling. While the tomatoes are still growing.
We have planted another batch of pechay since it's one of my best low carb veggie partner.

Low Carb Meals
Here are some of my low carb meals. There are time na inaabot akong maging creative sa food. On a daily basis, normal table food ang kinakain ko. Kung anong available na luto sa bahay will do basta walang rice.
Hindi din naman ako mahilig sa rice kaya hindi mahirap for me to remove rice on my meals. You know what's the hardest part of my low carb? Yung mga kakanin! I love kakanin..puto, bibingka, suman, sapin-sapin name it! Also yun bread and mga sortidos (tawag samin sa Quezon sa mga native biscuits).

My Low Carb Journey
It was not an easy journey but it was really worth it.
How I started? I didn't perfectly done it. Tao lang ako natutukso lalo na kung may monay at palaman :-)..but because I really wanted to get in shape, I tried to resist the temptation and get back on track again.
First thing you must do is to have the discipline and determination. Maraming tukso along the way, may birthday, anniversary, wedding, binyag at kung anu-ano pang occasions plus si Jollibee pakalat kalat..
Next eat meat, egg, seafoods you can add leafy veg pang-alis umay..you can have black coffee or a bulletproof coffee (black coffee, all purpose cream, butter and equal gold..
Repeat until you reach your goal weight.
Avoid pasta, bread, fruits (except strawberry and avocado) and vegetables high in carbs (all rootcrafts) anything starchy is a NO.
As per the coaches, avoid doing exercise as long as you are still losing weight since it will install your weight due to muscle gain. What I did was I workout when I reached my normal BMI and weight.

First Travel Photo
Throwback muna tayo mga mamsh! Alam kong labas na labas na din kayo at kating kati na ang mga paa gumala.
Ito yun first travel namin as family. Photo was taken when our Sundae is only 10mos old, in Kamay ni Jesus, Lucban Quezon.
La Union sana kami this summer, but since ECQ, bahay bahay na lang muna.

Planting on ECQ
Dahil sinira ni #typhoonambo ang pechay, replanting kami at to the rescue si Daddy at Sundae. Ilang days ulit ang hihintayin namin to grow these.
Yung okra naman is safe. Yung indian mango na sana maniba na namin susungkitin eh naglaglagan na din. Namulot lang kami nong sa tingin namin kaya namin kainin the rest iniwan na namin para pulutin ng ibang makakagusto kesa masira lang.
Still, all praise to God because we are safe! It's all that matters!

Lumpiang Sardinas
For sure marami kayong sardinas ngayon. Let's turn it into something special.
You will need
onion
garlic
ground pepper
salt
carrots
canned sardines
lumpia wrapper
oil
Mashed the sardines pwedeng alisin yun sauce pwede naman isama pamparami.
Saute onion and garlic, add yung carrots kapag golden brown na then salt and pepper. Then add na yun mashed sardines, simmer for about 2-3mins. Pwede mag add ng onion leeks or kinchay para pang-alis lansa.
Palamigin lang then balutin sa lumpia wrapper, fry it until golden brown and walahhh pangmaharlika na ang sardinas mo sa panahon ng #covid19.

Maruyang Kalabasa
Yung kalabasa mo gawin nating merienda..
You will need
1 small kalabasa
1/2 kg flour
1/4 kg brown sugar
2 cups water
Oil for frying
1. Ilaga yung kalabasa until kaya mo na syang i-mush.
2. Mix flour and sugar then pour it dun sa mushed kalabasa, add water gradually until pwede na imasa or i-shape na parang maruya.
3. Kapag nag-encorporate na ang mixture pwede na ideep fry.
Pwedeng mong lagyan ng cheese kung medyo nakaririwasa ka sa buhay 🤭🤭. This is best merienda ng mga picky-eater na kiddos.
